Hi guys.
I harvested my sweet potatoes today, and the voles had done a lot of damage. Is it safe to eat a sweet potato that voles have partially eaten?

I tried growing sweet potatoes for the first time this year. Some of them did have critter damage. I am eating them. Of course I wash, pare away the really bad parts and cook them before I eat them.

Interesting, I planted white ones because the orange ones were sold out. Have been eating them without having cured them. They are good but could be sweeter. Something like regular potatoes but sweeter and more fibrous .

Weird -- I just read this morning about sweet potatoes needing to be cured. They're starchy like normal potatoes when freshly dug, but the starches turn to sugars over time. I had no idea!
