Thanks for the ID and all the great info. It's good to finally know what it is. When times get rough enough I'll give the recipes a try, but I'll leave out the pork brains until the depression is truly upon us.
The plant itself is attractive, looking somewhat tropical in appearance.

I think the cold is good for the temperate bamboos at this point. I'd just watch for sudden cold snaps and lower 20's then start thinking about getting them protection.

Only a guess, but it seems like no light would be ok as long as the temps were low enough to keep the plants dormant. If the plants are not dormant, then I don't know how long they'd survive. I tried overwintering Bambusa textilis (tropical) in my unheated garage. There are no windows & no light...

I've kept Phyllostachys in my garage over winter successfully. I did try to keep the temps above freezing most of the time but it fell into the 20's a few times. It does seem to be difficult to capture some of the subtle nuances of bamboo on film (or on sensor I guess I should say). I agree with David, if you can get a closer shot, that would probably help. Amazingly I can remember all the names. When I die tho people are going to wonder what's what. I can even remember where the dead plants were and what their names were. As for peoples' names, I have more trouble remembering. Maybe I need to try labeling people with my 2' PVC plant stakes.
